Cold Sesame Noodles

Silky noodles tossed in a rich, nutty sesame-peanut sauce with cucumber, carrots, and a kick of chili oil. Ready in 20 minutes, perfect for hot days.

Ingredients

  • 200 g soba or wheat noodles
  • 3 tbsp tahini or peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp chili oil
  • 1 clove garlic, minced
  • 1 cucumber, julienned
  • 1 carrots, julienned
  • 1 tbsp sesame seeds

Instructions

  1. 1Cook noodles per package. Rinse under cold water, drain well.
  2. 2Whisk together tahini, soy sauce, rice vinegar, sesame oil, chili oil, and garlic.
  3. 3Toss cold noodles with sauce, cucumber, and carrots.
  4. 4Top with sesame seeds. Serve cold or at room temperature.
