French Onion Soup
Deeply caramelised onions in a rich beef broth, topped with a crouton and bubbling Gruyère. This recipe takes patience but delivers.

Ingredients
- •6 large yellow onions
- •4 tbsp butter
- •1/2 cup dry white wine
- •1 L beef broth
- •4 sprigs fresh thyme
- •4 baguette slices
- •200 g Gruyère cheese, grated
Instructions
- 1Slice onions thinly. Cook in butter over medium-low heat 45–60 min until deep caramel brown.
- 2Add wine and cook until evaporated. Add broth and thyme. Simmer 20 min. Season.
- 3Toast baguette slices until very dry and crispy.
- 4Ladle soup into oven-safe bowls. Float a crouton, pile with Gruyère.
- 5Broil until cheese is bubbling and golden, 3–4 min.
