French Onion Soup

Deeply caramelised onions in a rich beef broth, topped with a crouton and bubbling Gruyère. This recipe takes patience but delivers.

Ingredients

  • 6 large yellow onions
  • 4 tbsp butter
  • 1/2 cup dry white wine
  • 1 L beef broth
  • 4 sprigs fresh thyme
  • 4 baguette slices
  • 200 g Gruyère cheese, grated

Instructions

  1. 1Slice onions thinly. Cook in butter over medium-low heat 45–60 min until deep caramel brown.
  2. 2Add wine and cook until evaporated. Add broth and thyme. Simmer 20 min. Season.
  3. 3Toast baguette slices until very dry and crispy.
  4. 4Ladle soup into oven-safe bowls. Float a crouton, pile with Gruyère.
  5. 5Broil until cheese is bubbling and golden, 3–4 min.
