Ingredients

  • 1 (1.5kg) whole chicken
  • 2 yellow onions, halved
  • 1 ginger, 3-inch piece
  • 4 star anise
  • 1 cinnamon stick
  • 3 tbsp fish sauce
  • 400 g flat rice noodles
  • 2 cups bean sprouts
  • 1 bunch fresh basil and cilantro
  • 4 lime wedges

Instructions

  1. 1Char onions and ginger directly over a gas flame until lightly blackened. This adds depth.
  2. 2Toast star anise and cinnamon in a dry pan 2 min until fragrant.
  3. 3Place chicken in a large pot with 3 liters of water. Bring to boil, skim foam.
  4. 4Add charred onion, ginger, spices, and fish sauce. Simmer uncovered 90 min.
  5. 5Remove chicken; shred the meat. Strain and return broth to pot. Season.
  6. 6Cook noodles per package. Serve in bowls with chicken, fresh herbs, bean sprouts, and lime.
