Hanoi-Style Chicken Pho

Ingredients
- •1 (1.5kg) whole chicken
- •2 yellow onions, halved
- •1 ginger, 3-inch piece
- •4 star anise
- •1 cinnamon stick
- •3 tbsp fish sauce
- •400 g flat rice noodles
- •2 cups bean sprouts
- •1 bunch fresh basil and cilantro
- •4 lime wedges
Instructions
- 1Char onions and ginger directly over a gas flame until lightly blackened. This adds depth.
- 2Toast star anise and cinnamon in a dry pan 2 min until fragrant.
- 3Place chicken in a large pot with 3 liters of water. Bring to boil, skim foam.
- 4Add charred onion, ginger, spices, and fish sauce. Simmer uncovered 90 min.
- 5Remove chicken; shred the meat. Strain and return broth to pot. Season.
- 6Cook noodles per package. Serve in bowls with chicken, fresh herbs, bean sprouts, and lime.
