Texas-Style Beef Chili
No beans, no apologies — this is Texas chili. Chunky beef, dried chiles, and a deeply spiced sauce that only gets better after a day in the fridge.

Ingredients
- •1.5 kg beef chuck, 1-inch cubes
- •4 dried ancho chiles
- •2 dried pasilla chiles
- •3 cups beef broth
- •1 large white onion, diced
- •6 cloves garlic
- •2 tsp cumin
- •2 tbsp masa harina
Instructions
- 1Toast chiles in a dry pan. Remove seeds, soak in hot water 15 min. Blend with garlic and soaking water.
- 2Season beef, brown in batches in a large pot. Remove.
- 3Sauté onion. Add chile paste and cook 5 min, stirring.
- 4Return beef. Add broth and cumin. Simmer uncovered 2–2.5 hours until beef is very tender.
- 5Stir in masa harina to thicken. Simmer 15 more min. Season with salt.
