Perfect Sunday Pancakes
Tall, fluffy pancakes with golden edges and a tender crumb that pulls apart in layers. The secret is resting the batter and not overmixing.

Ingredients
- •2 cups all-purpose flour
- •2 tsp baking powder
- •1/2 tsp baking soda
- •2 tbsp sugar
- •2 cups buttermilk
- •2 eggs
- •3 tbsp butter, melted
- •1 tsp vanilla extract
Instructions
- 1Whisk flour, baking powder, baking soda, sugar, and salt.
- 2In another bowl, whisk buttermilk, eggs, melted butter, and vanilla.
- 3Pour wet into dry, stir just until combined — lumps are fine. Rest 5 min.
- 4Heat a lightly buttered griddle over medium. Pour 1/3 cup batter per pancake.
- 5Cook until bubbles form on surface and edges look set, 2–3 min. Flip once, cook 1–2 min more.
