Perfect Sunday Pancakes

Tall, fluffy pancakes with golden edges and a tender crumb that pulls apart in layers. The secret is resting the batter and not overmixing.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp sugar
  • 2 cups buttermilk
  • 2 eggs
  • 3 tbsp butter, melted
  • 1 tsp vanilla extract

Instructions

  1. 1Whisk flour, baking powder, baking soda, sugar, and salt.
  2. 2In another bowl, whisk buttermilk, eggs, melted butter, and vanilla.
  3. 3Pour wet into dry, stir just until combined — lumps are fine. Rest 5 min.
  4. 4Heat a lightly buttered griddle over medium. Pour 1/3 cup batter per pancake.
  5. 5Cook until bubbles form on surface and edges look set, 2–3 min. Flip once, cook 1–2 min more.
