Classic Smash Burger
The secret to the best burger is smashing it on a blazing hot griddle — it creates the ultimate crust and keeps the inside incredibly juicy.

Ingredients
- •300 g ground beef (80/20)
- •4 slices American cheese
- •2 brioche buns
- •1 tbsp butter
- •1/2 white onion, sliced thin
- •6 slices pickles
- •2 tbsp garlic aioli
Instructions
- 1Divide beef into 4 equal 75g balls. Do not season yet.
- 2Heat a cast-iron griddle until smoking hot. Add onions, let them char slightly.
- 3Place beef balls on griddle, immediately smash flat with a spatula. Season with salt.
- 4Cook 90 seconds without touching. Flip. Immediately top with cheese. Cook 60 more seconds.
- 5Toast buns in butter. Sauce and stack double patties.
