Ingredients

  • 300 g ground beef (80/20)
  • 4 slices American cheese
  • 2 brioche buns
  • 1 tbsp butter
  • 1/2 white onion, sliced thin
  • 6 slices pickles
  • 2 tbsp garlic aioli

Instructions

  1. 1Divide beef into 4 equal 75g balls. Do not season yet.
  2. 2Heat a cast-iron griddle until smoking hot. Add onions, let them char slightly.
  3. 3Place beef balls on griddle, immediately smash flat with a spatula. Season with salt.
  4. 4Cook 90 seconds without touching. Flip. Immediately top with cheese. Cook 60 more seconds.
  5. 5Toast buns in butter. Sauce and stack double patties.
