Matcha White Chocolate Macarons

Delicate French macarons with an earthy matcha shell and a sweet white chocolate ganache filling. Requires patience but the result is stunning.

Ingredients

  • 120 g almond flour
  • 200 g powdered sugar
  • 2 tsp matcha powder
  • 110 g aged egg whites
  • 100 g caster sugar
  • 150 g white chocolate
  • 60 ml heavy cream

Instructions

  1. 1Sift almond flour, powdered sugar, and matcha together twice.
  2. 2Whip egg whites to stiff peaks, gradually adding caster sugar.
  3. 3Fold dry ingredients into meringue using the macaronage technique until batter flows like lava.
  4. 4Pipe 3.5cm circles onto lined trays. Tap firmly to release air. Rest 30–45 min until a skin forms.
  5. 5Bake at 150°C for 16–18 min. Cool completely before removing.
  6. 6Heat cream, pour over chopped white chocolate, stir until smooth. Cool until pipeable.
  7. 7Sandwich cooled shells with ganache. Refrigerate 24 hours for best texture.
