Matcha White Chocolate Macarons
Delicate French macarons with an earthy matcha shell and a sweet white chocolate ganache filling. Requires patience but the result is stunning.

Ingredients
- •120 g almond flour
- •200 g powdered sugar
- •2 tsp matcha powder
- •110 g aged egg whites
- •100 g caster sugar
- •150 g white chocolate
- •60 ml heavy cream
Instructions
- 1Sift almond flour, powdered sugar, and matcha together twice.
- 2Whip egg whites to stiff peaks, gradually adding caster sugar.
- 3Fold dry ingredients into meringue using the macaronage technique until batter flows like lava.
- 4Pipe 3.5cm circles onto lined trays. Tap firmly to release air. Rest 30–45 min until a skin forms.
- 5Bake at 150°C for 16–18 min. Cool completely before removing.
- 6Heat cream, pour over chopped white chocolate, stir until smooth. Cool until pipeable.
- 7Sandwich cooled shells with ganache. Refrigerate 24 hours for best texture.
