Japchae (Glass Noodles)

Korea's favourite party dish — chewy sweet potato glass noodles stir-fried with colourful vegetables, seasoned with sesame and soy.

Ingredients

  • 200 g sweet potato glass noodles
  • 150 g beef sirloin, thinly sliced
  • 100 g spinach
  • 100 g shiitake mushrooms, sliced
  • 1 carrot, julienned
  • 2 bell pepper, sliced
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp sugar
  • 2 tsp sesame seeds

Instructions

  1. 1Cook glass noodles, rinse in cold water. Toss with 1 tbsp soy sauce and 1 tbsp sesame oil.
  2. 2Marinate beef in soy sauce and garlic. Stir-fry until cooked. Set aside.
  3. 3Cook each vegetable separately in the wok until tender but vibrant.
  4. 4Blanch spinach, squeeze dry, season with sesame oil.
  5. 5Combine all components. Add remaining soy, sugar, and sesame oil. Toss well. Garnish with sesame seeds.
